Deleting a custom organization field in Zendesk is permanent and removes the field and its data.

To delete, go to the Admin Center, click 'People', and select 'Configuration > Organization fields'. Hover over the field, click the option menu, and select 'Edit'. Then, click the option menu icon at the top and choose 'Delete'. Confirm the deletion to remove the field and its data. Note that data persists as tags if the field added a tag to the organization.
