Yes, admins can edit or delete smart list templates in Zendesk Sell. Editing a template won't affect existing smart lists created from it, only new ones.
To edit a template, go to Settings, then Customize for Leads, Contacts, or Deals, and click the Smart List Templates tab. Select Edit for the desired template, make your changes, and click Save. To delete, click the trashcan icon next to the template and confirm the deletion. Deleting a template also doesn't affect existing smart lists.
